Maple Pecan Sweet Potatoes

8 cups sweet potatoes (peeled and cut into bite size chunks)
1/3 cup pure maple syrup
2 tablespoons butter or margarine, melted
1 tablespoon lemon juice
1/2 cup pecans, chopped coursely
salt & pepper to taste

Preheat oven to 400 degrees. Pour sweet potato chunks into a 9"x13" baking pan.
In a small bowl, stir together the maple syrup, butter or margarine, lemon juice, and pecans. Pour evenly over potatoes and turn over with spoon to coat evenly.
Sprinkle with salt and pepper if desired.

Cover pan with foil and bake for 20 minutes. Remove foil and continue baking for 40 minutes or until tender, stirring occasionally.



Jen's Comments: This makes a great veggie side dish! The maple syrup gives a nice sweet flavor. The pecans add a great taste and texture too! Try it and see - you won't miss the eggs or cream found in many sweet potato casseroles.
